ROAST BEEF & MANGO WRAP
Roast Beef & Mango Wrap:
1 mango, peeled and chopped
2 Tbsp. finely chopped red onion
2 Tbsp. chopped cilantro
1/2 cup finely chopped spinach
1 Tbsp. lime juice
Salt and fresh ground pepper, to taste
1 large whole wheat tortilla
8 oz. cooked (deli) roast beef, sliced
HOW:
Place first five ingredients in a bowl and toss gently. Season with salt and pepper. Place tortilla on a plate and top with roast beef. Toss with salsa mixture and wrap up. Side items is 1/2 cup of cottage cheese w/ spoonful of black beans.
